It turns out that amazing last minute deals over Christmas *do* exist on rare occasion.
The Gran Bahia Principe Coba just dropped to $765/person after tax, for their December 19-26 package.
Flight, hotel, food, drinks, etc.
And it's one of the nicest resorts in Mexico as well, the Gran Bahia Properties are all extremely nice. Google for the reviews on TripAdvisor and you'll see what I mean.

Update @ 4:49PM - The December 18-25 package to the Barcelo Maya Colonial Beach just dropped to $665/person after tax. This resort is in the 'extremely nice' quality level as well. I'll post the details in the discussion forum above.
Update 12/15 @ 10:17 AM - The Catalonia Yucatan (also on the Mayan side) has dropped to $644/person after tax for their December 18-25 package. And $714 for their December 19-26 package. The Catalonia Yucatan gets amazing reviews on TripAdvisor as well. (90% of people recommend it). Details in the discussion above.

We stayed at the Gran Bahia Coba and would suggest it to anyone...Only downside is it is about 1 1/2 hours by bus to the resort by time you get there but worth it....lots of entertainment, food was good, and staff are great...
Another great deal - Westjet kids fly free package. Book before Dec 31/10 to fly to Orlando, 7 nights includes round trip airfare and hotel. For a family of 4 adults (children 14+) is cost us only $1600 for all of us after fees and taxes!! Food and park tickets to Disney extra, hotel includes free shuttle services.

I would say $400/person after tax is quite good, it's basically like getting the hotel portion for free, because that's about what it normally costs for the cheapest flights alone.
I have stayed at this resort twice, and it is one of the best in the Mayan.
I would highly reccommend it, and for that price they are giving it away.
It would usually run you minimum $1300 per person and is worth it.
